My favourite part about their products are that they’re made with simple ingredients. What you think will be in your ravioli and sauce is exactly what’s actually in it. As an Italian myself, I was taken aback by the quality of the ingredients and just couldn’t put my fork down even if I tried! For this recipe, I wanted to test their plant-based options and go with the sausage & fennel. When I tell you, you won’t miss the meat- you literally cannot tell the difference, I was floored. Tips for the Perfect Vegan Ravioli
- Take the skin off your roma tomatoes before cooking them (or don't). I didn't but if you don't want the skin in your sauce just blanche them first!
- Your fresh tomatoes are going to need some time to cook! Give them at least a 10 minute head start before your canned tomatoes.
- Cook your pasta as per the packaging! Pasta Travola recommends 8 minutes for their plant-based pasta, it makes a difference if you cut it short.

Vegan Ravioli Recipe with Vegan Sausage & Fennel
Ingredients
- 1 package Pasta Travola Plant-Based Sausage & Fennel
- 1 1/2 cup Canned Tomatoes
- 1 Garlic Clove Minced
- 10 Basil Leaves Fresh
- 2 tbsp Extra Virgin Olive Oil
- 1 tbsp chilli flakes
- 3 roma tomatoes
Instructions
- In a saucepan, add your olive oil and cook your minced garlic and chilli flakes for 1-2 minutes
- Add your Roma Tomatoes and let cook for 10 minutes. Add your jar of tomatoes & basil and let cook for 15-20 minutes.
- While your sauce is cooking bring a pot of water to a boil to cook your pasta. Cook as per the package instructions.
- Strain your pasta- leaving some of your pasta water aside. Add your noodles to your sauce and serve!
