Welcome back to another amateur recipe. If I can do it, so can you! Today, we’re talking about a super easy recipe for vegetarian pasta featuring a delicious avocado cream sauce! This recipe is perfect for spring & summer and takes only 20 minutes to make so that you can get back to life!
I was honestly shocked as to how fast this recipe came together. When your pasta is cooked, you’ll be sitting at the table, ready to eat! The inspiration for this dish came from the noodles I picked up at winners (or TJ Maxx for my American friends). I loved the pastel colours on the noodles & thought they were perfect for a spring dish!

I wanted something that reminded me of spring & summer and wouldn’t be too heavy & make you feel bloated. Queue my delicious & easy vegetarian pasta with avocado sauce!

What Kind of Pasta To Use?
I went with a Farfalle (the butterfly pasta); however, you can really use whatever you want! Another good option would be the fusilli (the twirly one) as the sauce gets in between the ridges!
How To Make it Vegan?
If you’re looking to make this recipe vegan, all you have to do is swap out the milk. You can use coconut milk instead or use some pasta water from boiling your noodles.
Of course, don’t use the Boursin cheese on top either. just stick with tomatoes!
The Boursin Cheese
I couldn’t be lucky enough to get sponsored for this. But Boursin cheese is 10/10. It’s a creamy, spreadable cheese you typically use on crackers, but today we’re using it for this pasta!
It is the perfect addition that compliments this recipe for vegetarian pasta so well! I chose to use the herb & garlic, but they have tons of other options you could also choose.

Vegetarian Pasta with Avocado Sauce
Ingredients
- 1 500g pasta
- 2 tomatoes
- 2 cloves garlic
- 1/2 cup milk
- 1 tbsp lemon
- 1 handful basil
- 1 tbsp parsley
- 1/2 tsp cayenne pepper
- 15-20 cherry tomatoes
- 1 boursin herb & garlic cheese
Instructions
- In a blender mix together your avocado, garlic, milk, basil, parsley, lemon salt & pepper until completely smooth.
- In a large pot begin boiling water, and cook pasta as per instruction on the packaging.
- With 5 minutes left until your pasta is cooked- Add your sliced tomatoes to a saucepan and cook on medium-low.
- Once your pasta is done- add your avocado sauce to the pan followed by your pasta.
