Spicy Pork and Vegetable Stir Fry
Ingredients
- 2 tbsp Garlic Chili Sauce
- 2 Garlic Cloves - minced
- 1 tbsp Ginger - minced
- 2 tsp Stevia Brown Sugar - (or 2 tbsp regular brown sugar)
- 2 tbsp Soy sauce
- 1 lbs Pork Tenderloin
- 1 Red Bell Pepper
- 1 large Carrots
- 2 Baby Bok Choy
- 1 tbsp Olive Oil
- 1 tsp Corn Starch
- 1 cup Rice
Extras
- Cilantro
- Sesame Seeds
- Green Onions
- Siracha
Instructions
Prep
- Begin by mixing your sauce. Add your minced garlic & ginger, Garlic Chilli Sauce, Brown Sugar and Soy Sauce to a bowl and set aside.
- Slice your pork into thinly sliced pieces and your veggies into even bite-sized pieces.
- Optional: If you want your pork to be extra tender-mix in a bowl with 1 tsp of cornstarch before cooking.
Cooking
- Before starting your stir fry, begin cooking your rice as per packaging instructions.
- In a large pan on medium-low add in your olive oil, followed by your pork. Let cook for 3-4 minutes until mostly cook. Remove from your pan and set aside.
- In the same pan add in your veggies and cook for 5-7 minutes.
- Add your pork & sauce to your pan, and let cook for another 3-4 minutes, ensuring your pork is cooked through.
- Remove your veggies and pork from your pan-leaving your sauce. Add 1 tsp of cornstarch and whisk until your sauce thickens.
- Add your rice and stir fry to a bowl and top with your favourite extras.
