What is Date Bark?
So date bark- it’s essentially a “healthy” chocolate bar. Do I think it’s healthy? Not really. Do I think it’s better for you than a chocolate bar? Sure. The main reason being that you have control over the ingredients and the amount of each your adding to the recipe. You’re left with a homemade snack made with real ingredients you bought yourself, which in the long run will be better for you than a chocolate bar that’s been sitting on a store shelf for 6 months.Â
Â
The classic viral date bark consists of dates, peanut butter, peanuts, and chocolate to replicate a Snickers bar. I’ve decided to take a different direction with it and swap out some ingredients and add in cashew butter and hazelnuts. I prefer hazelnuts, and since we’re getting rid of the peanuts, we may as well swap the peanut butter too for cashew butter. There are really endless combinations to get a similar result, so let’s get into my recipe for Date Bark!
Tips for the Perfect Date Bark
- Squish those dates! The closer they are together the better base they'll form for the rest of the recipe. I also recommend cutting your dates in half, so the date layer isn't so thick.
- If you're having trouble melting your cashew butter or chocolate- add a little coconut oil to loosen it up. Remember, a little goes a long way!Â
- Keep it in the fridge or freezer longer than you think. I found the next day to be even better than the first.Â

Storage & Leftovers
So you made this delicious date bark recipe, but now you have to deal with storage. Likely, storage for this recipe is very simple. Grab an air-tight container and put your date bark pieces inside. Keep in the freeze for up to a week (if they even last that long). If you want, you can add more parchment paper in between the layers to prevent them from sticking.
