Creamy Gnocchi Recipe | With Spinach & Beans
Ingredients
- 3/4 cup White Kidney Beans
- 3-4 cubes Frozen Spinach
- 1 Package Gnocchi - 500g
- 3 Garlic Cloves - Minced
- 1/2 tsp Chili Flakes
- 1 tsp Salt & Pepper - each
- 2-3 tbsp Extra Virgin Olive Oil
- 1/2 cup Burrata - Optional
- 1/4 cup 10% Cream - Optional
Instructions
- In a medium pot, begin boiling your water for your gnocchi.
- In a blender, add your spinach, beans, salt, pepper and cream. If you're not using cream, add in 1-2 tbsp of olive oil. Blend until smooth.
- In a large pan on medium heat, add in the rest of your olive oil, garlic, and chillies. Cook until aromatic (1-2).
- Add in your sauce and let cook for 2-3 minutes.
- Add in your cooked gnocchi and stir until fully combined.
- If you're using burrata finsh off with 1-2 tbsp and enjoy!
