Carrot Cake No Bake Protein Balls
Ingredients
- 1/2 cup Shredded Carrots
- 1/2 cup Oat Flour
- 3 tbsp Maple Syrup
- 1/4 tsp Ginger, Cardeman, and Cinnamon - each
- 2 tbsp Cashew Butter
- 1/4 cup Vanilla Protein Powder
- pinch Nutmeg
For "Frosting"
- 1 tbsp Maple Syrup
- 2 tbsp Greek Yogurt
- 1/3 cup Light Cream Cheese
- 1/2 tsp Vanilla Extract
Instructions
- In a bowl mix together all your ingredients, minus the frosting ingredients, and stir.
- If your mix is still too wet add in a tbsp of oat flour at a time until it stiffens up (or it doesn't stick to your hands when you roll it.
- Take 1 tbsp(ish) of mixture and roll into a ball. You should end up with 9.
- Pop in the friedge and enjoy!
Frosting
- Add all your ingredients to a bowl and stir until smooth. A fork will work better than a spoon.
- Spread over your protein balls and enjoy!
