Mushroom soup, you either love it, or you hate it. For those who love it, welcome! This recipe was for you. There are a few recipes why I loved this recipe.

 

1. It doesn’t have 100 ingredients, so you’ll be able to whip this up without having to purchase too many random items.

2. It’s ready in NO TIME. 25 minutes for a soup? Yes, please. If you don’t have much in the evening, this is a great healthy option to serve up.

3. It’s vegan, aka, it’s most people-friendly. So if you’re off the meat train or lactose intolerant, you can enjoy this without worry. Trust me when I say you won’t miss the cream at all!

4. Last but not least, it’s a low-calorie & carb option my keto friends will appreciate. This recipe is coming in at less than 215 calories & 6g of carbs per serving.

Vegan Cream Of Mushroom Soup

Ingredients
  

  • 1/2 Onion - Diced
  • 3 Minced Garlic Cloves
  • 1 Package of Mushrooms
  • 1 Chicken or Vegetable Cube
  • 3 Cups Water
  • ¼ TSP Thyme
  • ¼ TSP Rosemary
  • 1/4 TSP Salt
  • 1 TBSP Flour

Instructions

  • Begin by gathering your ingredients. Dice your onions, mince your garlic and slice your mushrooms. 
  • On mid-low, add your onions & garlic to a pot, and cook until you smell it. 
  • Add in your mushrooms, salt, stir and cook for 1-2 minutes. 
  • Add in your thyme & rosemary, and stir until evenly coated. Add your water & stock cube, and let cook for 5-7 minutes on medium. 
  • Turn your stove down to low, add in your coconut milk & flour & whisk until the flour is completely dissolved. 
  • Get your bowls ready, take an instagrammable pic and enjoy!
