- Make sure your granola is sticking together before you move on! If the mixture is too dry the cups will fall apart. Add additional cashew butter as needed until it sticks.
- Try not to overfill the centre of your cups with cashew butter. You want to make sure the butter is staying in your little well.
- Get creative with your toppings! I added coconut flakes and butterscotch chips to mine and they turned out AMAZING!

 Okay, substitutions. Where to start? For your sweetener, you can use honey instead of maple syrup. Honey will actually help it stay together, butter, but I find maple syrup has the better taste. I used cashew butter for this recipe, but you can use any nut butter. Naturally peanut butter is usually a fan favourite! For your chocolate, I recommend sticking to dark or semi-sweet. Milk is great but it melts very quickly out of the fridge. For your toppings you can add whatever you want! Any crushed nuts, white chocolate, coconut flakes or just plain old chocolate will be delicious!Â

No Bake Chocolate Granola Cups
Ingredients
- 1 1/2 cup Quick Oats
- 3/4 cup Cashew Butter
- 2 tbsp Maple Syrup
- 1 tsp Vanilla Extract
- 1 cup Dark Chocolate Chips
- 1 tbsp Coconut Oil
- Flakey or Sea Salt
Instructions
- Begin by mixing your oats, maple syrup, 1/4 cup cashew butter, vanilla extract and sea salt in a bowl. If needed add an additional 1 tbsp of cashew butter until mixture is sticking together.
- In a greased muffin tin divide your granola base and pat down- creating a little well for your cashew butter with a shot glass or equivalent size.
- Next, add 1 tsp of cashew butter to the centre of each cup - try not to overfill.
- Add your coconut oil and chocolate chips to a microwave safe bowl, and microwave for 30 seconds until melted.
- Add chocolate overtop of your cashew layer, and sprinkle flakey salt on top.
- Pop in the fridge for 20 minutes and enjpy!
