We’re back with Korean Lettuce Wraps with Chicken! This is an easy chicken lettuce wrap recipe with Asian inspiration and ready in only 20 minutes! If you’re looking for a healthy option for lunches or meal prep, these wraps are only 300 calories per serving, low carb, and packed with protein!

What’s Best: Ground Chicken or Whole Chicken?

I used chicken breast for this recipe and diced it up simply because it was cheaper at the store that day (lol). However, you can also choose to use ground chicken or ground turkey for your lettuce wraps. If you choose to use turkey, the calories will probably end up being lower since turkey is a leaner meat.

 

What Lettuce for Lettuce Wraps?

Great question! For this recipe, I use romaine because I often use romaine, so I knew I could use it in other things. Secondly, most grocery stores have romaine lettuce, so I thought it would be the easiest. However, you can also use a butterhead, coral, or even iceberg lettuce.

The big thing with this is that you want a leaf with a relatively large surface area to fit your lettuce wrap goodness.

 

What Else Can I Substitute?

The short answer to that is basically anything. If you don’t like something in this recipe, take it out or switch it. At the end of the day, YOU need to be the one to like it.

The one thing I suggest NOT substituting is the gochujang paste since it provides a very unique flavour. That being said, if you’re desperate, you can switch it for sriracha chilli sauce- but it won’t be the same.

 

Suitable Substitutes for Lettuce Wrap Recipe

  • 1 teaspoon garlic powder for 1 garlic clove

  • 1/2 teaspoon ginger for 1 piece fresh ginger

  • 1 tbsp sugar for 1 tbsp brown sugar

  • Kimchi for pickled jalapenos (you want some sort of vinegar)

  • Rice wraps for lettuce wraps

If you have kimchi or make your own, it would be a HIGHLY recommended substitution for this recipe. That being said, not everyone will have this in their grocery store, so pickled jalapenos (the ones in the jar) are an excellent plan B, and one everyone should have access to!

Korean Lettuce Wraps With Chicken

Ingredients
  

For Wraps

  • 2 Chicken Breasts or 1 package ground chicken
  • 6-8 Romaine Lettuce Leaves
  • 1/3 Cup Jalapenos
  • Cup Grated Carrots
  • 1 Avocado
  • Handful of Cilantro Optional
  • 1 Minced Garlic Clove
  • 1 TBSP Fresh Ginger
  • 1 TBSP Brown Sugar
  • 1 TBSP Soy Sauce
  • 1- 1½ TBSP Gochujang Paste

For Greek Yogurt Sauce

  • 1/2 Cup Plain Greek Yogurt
  • 1 Minced Garlic Clove
  • 1 TBSP Lemon
  • Pinch Salt & Pepper

Instructions
 

Lettuce Wraps

  • Begin by dicing your chicken into bite-size pieces. If you're using ground chicken skip this step.
  • In a small bowl mix your gochujang paste, minced garlic, minced ginger, soy sauce, and brown sugar until fully combined.
  • On medium-low add in some oil olive (or whatever you have), and cook your chicken for 2-3 minutes. Add in your sauce and cook for another 5 minutes until fully cooked through
  • Let your chicken cool before assembling!!
  • In the meantime grate your carrots, slice your avocado & jalapeno. 
  • Once your chicken is cooled assemble onto your romaine lettuce leaves and enjoy!

For Greej Yogurt Dip

  • Combine all your ingredients in a bowl and stir.
