For Freezing

If you’re planning on freezing your burritos for later, make sure you wrap them tightly in your tin foil. Store in a freezer-safe back for up to 6 months (don’t forget about them!)

For Meal Prepping

If you plan on meal prepping, I HIGHLY recommend NOT adding sauce (like salsa or sour cream) inside your burritos with the rest of your ingredients; this will make them soggy. I also suggest putting your lettuce down first to help act as a barrier for the other ingredients.

Let’s Talk About This Easy Chicken Burrito Recipe

Let’s skip the lengthy preamble found on most websites and dive straight into an easy chicken burrito recipe! Opting for chicken over beef not only ensures a healthier choice with less fat but also results in a less greasy burrito, preventing it from getting soggy too quickly.

Unlike traditional recipes, this easy burrito recipe excludes rice (unless it’s for a vegan/vegetarian version). This way, you maximize your calorie intake from the wrap and meat, avoiding wasted calories on unnecessary rice.

Ideal for family dinners or as a twist to your typical taco night, this recipe effortlessly covers all four food groups, provides an abundance of vitamins and minerals, and promises to keep you satisfied throughout the day.

Ingredients

For Burrito

  • 6 Whole Grain Burritos
  • 1 Pound Ground Chicken
  • 1 Taco Seasoning Packet
  • 1 Sweet Pepper
  • 1 Minced Garlic Cloves
  • 1 Cup Grated Cheese

Optional Ingredients

  • 1 Large Tomato
  • 1 Jalapeno
  • 3/4 Cup Black Beans
  • Handful of Cilantro
  • 1 Lime
  • 3/4 Cup Corn
  • Salsa
  • Sour Cream

Instructions

For Cooking

  • Begin by cooking your chicken & peppers on medium heat until your chicken is mostly white.
  • Once mostly white, add in your minced garlic clove & taco seasoning. Next, add in the recommended amount of water as per the instructions on your seasoning packet, and cook until the water evaporates.
  • While your chicken is cooking, begin prepping your veggies & cheese: dice your tomato, lettuce, and jalapeno. Next, grate your cheese, and strain your beans.

For Assembly

  • If you plan on freezing or meal prepping your burritos, wait until your chicken is cooled before folding your burritos.
  • Set a large pan to medium-low; before filling your tortilla, individually place your tortilla in your pan for 3 seconds on each side. This makes it easier to fold.
  • Add your ingredients to the bottom half of your burrito, fold, and wrap in tin foil!
  • Take an instagramable pic, get your serving sauces and enjoy!

  1. Lindsey says:

You said this makes 6 servings/burritos so all the ingredients listed are to be split evenly between 6 burritos, correct?

    1. Hi Lindsey, Yes this is split between the 6 burritos! Enjoy!

  2. Sarah Soules says:

Hi there, I made a bunch of these & put them in the freezer. How do I go about eating them now? Like how to “cook” them?

    1. Hi Sarah, So glad you were able to try them! I recommend popping them in the air fryer at 350 for 10-15 minutes. You can also put them in the oven at 350 for 25 minutes or simply microwave them for 3ish minutes (not my favourite way but will get the job done)! Enjoy!

  3. What size tortilla do you use?

    1. Hi Dawna!

      Typically I use a 9 or 10″ tortilla! Enjoy!
