Tips for the Perfect Air Fryer Spring Rolls
- Watch your liquids! You want to make sure your mixture is fairly dry before adding them to your spring roll paper. If the mixture is too wet you'll risk your spring rolls falling apart.
- It's better to cook for less and add more time later, than to overcook them right off the bat! I suggest adding your spring rolls in for 5 minutes max at a time, then decrease to 2-3 minutes if you feel they're still not cooked.
- If you're serving this dish as an appetizer I recommend adding the honey and pistachios to the top just before serving.

Air Fryer Spring Rolls
Ingredients
- 16 Spring Roll Wrappers
- 2 Large Carrots
- 1 Large Zucchini
- 1/2 Cup Bean Sprouts
- 2 Heads Bok Choy
- 1-2 TBSP Soy Sauce
- 2 Green Onions
- 1/2 TSP Pepper
- 2 TBSP Extra Virgin Olive Oil
- 2 Garlic Cloves - minced
Instructions
- Begin by chopping up your veggies into fine pieces. For your carrot and zucchini it may be easier to grate them.2 Large Carrots, 1 Large Zucchini, 2 Heads Bok Choy, 2 Green Onions
- In medium in a large pan add in a tbsp of olive oil and add your minced garlic. Cook for 1-2 minutes.
- Add in your veggies, soy sauce, and pepper and let cook until all liquids are evaporated.
- Add your mixture to a large plate and pop in the fridge to cool.
- Grab your spring roll wrappers, and fold (see images above). I repeat this twice but that's up to you!
- Add your spring rolls to an air fryer, and lightly coat with olive oil. Cook at 350 for 5 minutes. Rotate and repeat for another 3-5 minutes.
- Once cook, add to a serving dish and enjoy with your favourite Thai sauce!

Storage & Leftovers
To store your spring rolls, pop them in an air-tight container and store them in the fridge. To reheat your spring rolls, pop them back in the air fryer for 3-5 minutes at 350 to crisp them up again! Enjoy!Â
