This recipe is filled with pistachios, feta, radishes, peas and so much more! Not to mention this spring salad recipe is paired with a super simple garlic, lemon and mint dressing!

Now, let’s talk live lettuce. With vertical farming, there is no soil, so we need to replace it with some other kind of growing media. Here, we’re using peat moss plugs, which is where the roots are going to attach to.
The benefit of harvesting lettuce live is that it will last way longer than the stuff you get at the store! If you keep your plug wet, it will continue to stay just as fresh as the day you cut it off the tower.
Step 1: Gather the troops. I like to have everything ready ahead of time so you’re not rifling through the fridge trying to find something.
Step 2: Let’s get slicing and chopping. Slice your cucumbers & radishes, dice your avocado & feta, chop your pistachios, and shave your carrots.
Step 3: Lay down the foundation of any salad, which of course, is the lettuce.
Step 4: Pile on everything else. Obviously, for the photo, I made sure everything was perfectly placed; however, you can also just toss everything in there.
Step 5: It’s time to get dressed. Mince your garlic, squeeze your lemon, and finely chop your mint.
Step 6: Decide who you’re going to share this with, and enjoy!
Okay, But What Is a Spring Salad?
So I to didn’t really know what constitutes a salad for being “springy”. After doing some research, I’ve discovered that a simple salad has things like asparagus, peas, and mint. Ingredients
For Salad
- 4 Cups Lettuce
- 2 Radishes - Sliced
- 1/3 Cup Peas
- 1/4 Cup Pistachios - Chopped
- 1 Avocado - Diced
- 1/2 Cup Feta - Crumbled
- 1/2 Cucumber - Sliced
- 1 Carrot - Shaved
For Salad Dressing
- 1/4 Cup Extra Virgin Olive Oil
- 1 Garlic Clove - Minced
- 1-2 TBSP Lemon Juice
- 5-6 Mint Leaves - Chopped
- 1/2 TSP Salt
- 1/4 Cup Honey
Instructions
For Salad
- Begin by prepping your ingredients. Slice your radishes & cucumber thinly, chopped pistachios, dice avocado, crumble feta, and shave carrot into ribbons.
- In a large bowl add your washed lettuce.
- Add the remainder of your ingredients over top and toss.
- Pour dressing over your salad, stir and enjoy!
For Salad Dressing
- Begin by mincing your garlic and chopping your mint.
- Add all ingredients to a jar and stir or shake until completely combined.
