We're talking about an easy recipe for acorn squash that's healthy, super delicious, and the perfect addition to your fall menu! For this recipe, we're doing a roasted acorn squash topped with herbs, garlic, and romano cheese to make this an irresistible dish to have as a side for your next dinner!
Begin by cutting your acorn squash in half and scooping out the seeds. Then, with the flat side down, cut your squash into slices (about 1/2 an inch thick), and place in a large bowl.
In your large bowl, add in the rest of your ingredients and give it a good stir.
Place your squash pieces on a baking sheet, making sure no pieces overlap. (If you have scraps of cheese in your bowl, spread them across your squash pieces (leave no man or cheese behind!)
Cook your squash in your oven for 28-30 minutes.
Once cooked through, transfer to a nice plate, take an instagrammable pic and enjoy!
