Ingredients

  • 1 Acorn Squash
  • 1 Minced Garlic Cloves
  • 1 ½ TBSP Extra Virgin Olive Oil
  • ¼ TSP Salt
  • ¼ TSP Thyme
  • ¼ TSP Pepper

Instructions

  • First things first. Set your oven to 350 degrees.
  • Begin by cutting your acorn squash in half and scooping out the seeds. Then, with the flat side down, cut your squash into slices (about 1/2 an inch thick), and place in a large bowl.
  • In your large bowl, add in the rest of your ingredients and give it a good stir.
  • Place your squash pieces on a baking sheet, making sure no pieces overlap. (If you have scraps of cheese in your bowl, spread them across your squash pieces (leave no man or cheese behind!)
  • Cook your squash in your oven for 28-30 minutes.
  • Once cooked through, transfer to a nice plate, take an instagrammable pic and enjoy!
