Buffalo chicken quesadillas are a flavor-packed delight. Tender chicken smothered in spicy buffalo sauce, nestled between layers of melted cheese and crispy tortillas. Each bite is a perfect balance of heat and tang, making them a satisfying treat for any occasion.
Add your shredded chicken, chopped green onions, buffalo sauce, cheese, and sour cream to a bowl. Mix until fully combined.
In a large pan set your stove to low and place one tortilla on the bottom. Add a bit of cheese, and evenly coat your buffalo chicken mix over top (1/4 of recipe). Finish off with a bit more cheese and add your second tortilla on top.
Let cook until the bottom tortilla starts to brown.
Once cooked, flip your quesadilla over with a spatula and let cook until brown.
Remove from heat, and cut into 4. Serve with extra sauce if needed!
